Research
My
view of British and seasonal foods and drinks is unique, ever-evolving and
based on careful research, including:

comparative and sequential tasting of foods, taking account of seasonal
factors, where appropriate

shopping in supermarkets, farmers’ markets, farm shops, town markets and
independent retailers
-
travel to different regions
-
discussions with growers, producers and retailers
-
growing my own produce and foraging
-
very old cookery books, gardening books and herbals (I am not, however, a
food historian per se.)

the Brogdale Horticultural Trust (home of the National Fruit Collections)
- recipe-testing
and home-cooking.
